Oreo Mint Cookies (Print)

Chewy cookies with Oreos, minty crunch, and rich dark chocolate chips. Great for holidays!

# Ingredients:

01 - 1 large egg.
02 - ½ tsp vanilla extract.
03 - 8 tbsp unsalted butter, softened.
04 - ½ tsp peppermint extract.
05 - 1 box white cake mix.
06 - 4 oz cream cheese, softened.
07 - 1 cup Andes Peppermint Crunch pieces (save some for topping).
08 - 1 cup Oreo cookie chunks.
09 - ½ cup dark chocolate chips (keep a little extra for topping).

# Steps:

01 - Mix the softened butter, cake mix, egg, cream cheese, vanilla, and peppermint extract in a bowl until the dough is soft.
02 - Carefully fold in the cookie chunks, chocolate chips, and peppermint bits.
03 - Pop the dough in the fridge for at least an hour to let it firm up.
04 - Heat up your oven to 350°F (177°C). Roll the dough into 24 evenly sized balls.
05 - Put 12 of the dough balls on a baking tray and bake for about 10-11 minutes. Keep the other half in the fridge. Don’t let them bake too long—they should stay soft!
06 - Once baked, leave them on the tray for a moment before moving them to a rack to cool completely.
