Oatmeal Cookie Bars (Print)

Chewy oatmeal bars with raisins, finished with a creamy maple-cinnamon frosting. A delicious take on a cozy classic.

# Ingredients:

01 - 1 1/2 cups of plain flour.
02 - 1 tsp baking soda.
03 - 3/4 tsp of cinnamon powder.
04 - 1/2 tsp fine salt.
05 - 3/4 cup butter, softened to room temp.
06 - 3/4 cup packed light brown sugar.
07 - 2 eggs, at room temp.
08 - 2 tsp of real vanilla extract.
09 - 2 cups of quick oats.
10 - 1 cup raisins.
11 - 1/2 cup softened butter for frosting.
12 - 1 1/2 cups powdered sugar.
13 - 1 tbsp pure maple syrup.
14 - 1-2 tbsp heavy cream, at room temp.
15 - 1/2 tsp ground cinnamon for frosting.
16 - Optional: 1/4 tsp maple flavoring.

# Steps:

01 - Preheat your oven to 350°F. Line a 9x9 pan with some parchment and spritz it with nonstick spray.
02 - In a bowl, stir together the flour, salt, cinnamon, and baking soda until it’s blended evenly.
03 - Cream butter and sugar till fluffy. Add vanilla after beating in eggs, one by one. Mix in the flour combo, then gently fold in oats and raisins.
04 - Press the dough smoothly into the pan. Bake for 18–20 minutes, till the edges look a little golden. Let it cool all the way.
05 - Whip the butter until soft. Add powdered sugar, maple syrup, cream, cinnamon, and extract till it’s rich and creamy. Spread evenly on cooled bars.

# Notes:

01 - For softer raisins, soak them in warm water first.
02 - It’s tasty without any frosting if preferred.
03 - Swap for gluten-free flour if needed.
