15-Min Miso Soup (Print)

Warm and cozy miso soup with greens, tofu, and nori, ready super quick in 15 minutes.

# Ingredients:

01 - Chop up a sheet of nori (dried seaweed) into smaller pieces.
02 - Get 4 cups of veggie broth ready.
03 - Use 3-4 Tbsp of yellow or white miso paste.
04 - Dice 1/2 cup of green onion.
05 - Cut 1/4 cup of firm tofu into cubes.
06 - Slice 1/2 cup of sturdy greens like chard or kale.

# Steps:

01 - In a medium pot, gently heat up the vegetable broth until it’s barely bubbling.
02 - In a little bowl, combine the miso paste with some hot water and whisk until it’s blended and smooth.
03 - Toss the tofu cubes, greens, and green onion into the warm broth. Simmer for 5 minutes, then throw in the nori pieces.
04 - Turn off the heat and stir in the miso mixture. Taste and tweak seasoning if needed before serving.

# Notes:

01 - Enjoy it immediately while warm.
02 - For a classic touch, swap veggie broth with dashi.
03 - Soft tofu is more common if you’d like to switch it up.
