Mexican Layered Beef Pie (Print)

A meaty and cheesy dish with ground beef, sausage, and veggies, all baked together under a golden topping.

# Ingredients:

01 - 1 lb ground beef (85% lean, 15% fat).
02 - 8 oz spicy Italian sausage.
03 - 3 tbsp olive oil.
04 - 2 1/2 cups chopped white onions.
05 - 2 cups chopped green peppers.
06 - 1 finely chopped jalapeño.
07 - 2 tbsp minced fresh garlic.
08 - Spices: cumin, coriander, oregano, chili powder, salt, and pepper.
09 - 10 oz of drained Rotel diced tomatoes.
10 - 3 large eggs.
11 - 1 cup plain Greek yogurt.
12 - 1/2 cup all-purpose flour.
13 - 2 tsp baking powder.
14 - 2 1/2 cups shredded cheese blend.
15 - 1 cup chopped green onions.
16 - 1/4 cup chopped fresh cilantro.

# Steps:

01 - Grease a springform pan and line it with parchment paper.
02 - Cook the sausage and beef in a pan, then drain any grease.
03 - Cook veggies along with spices until just tender but still crisp.
04 - Whisk eggs, yogurt, flour, and baking powder into a smooth mixture.
05 - Layer batter, meat, veggies, and cheese in the pan, ending with batter on top.
06 - Bake for 45 minutes at 350°F, then broil briefly for a golden finish.
