Comfort Food Dinner (Print)

Savory meatloaf base topped with fluffy mashed potatoes, melted cheese, and smoky bacon. Easy to make, ridiculously tasty.

# Ingredients:

→ Meatloaf Layer

01 - ½ cup BBQ sauce
02 - ⅓ cup cottage cheese
03 - 1 tablespoon Worcestershire sauce
04 - 1 tablespoon minced garlic
05 - ½ cup finely chopped onion (white)
06 - 1 large egg, beaten lightly
07 - 1 cup seasoned breadcrumbs
08 - 1 ½ pounds ground turkey or lean beef

→ Potato Layer

09 - ½ cup milk (warm) or half-and-half
10 - ½ cup sour cream
11 - ½ cup unsalted butter
12 - 1 teaspoon black pepper
13 - 2 pounds potatoes, diced and peeled
14 - 1 teaspoon kosher salt

→ Toppings

15 - 1 ½ cups shredded cheddar cheese
16 - 6 slices thick bacon, cooked and crumbled

# Steps:

01 - Get the oven warmed up to 375°F and coat a 9x13 baking pan with some nonstick spray.
02 - Grab a big bowl and toss in the ground turkey or beef, onion, garlic, egg, breadcrumbs, Worcestershire sauce, BBQ sauce, and cottage cheese. Mix it up well.
03 - Dump the meat mix into your prepped pan and flatten it out evenly. Bake this for 30 minutes in the oven.
04 - While the meat bakes, toss the diced potatoes into a pot with water. Boil them over medium heat until they’re soft.
05 - Once the potatoes are cooked, drain the water off, then stir in the butter. Use a hand mixer (or a masher) to make them smooth. Toss in warm milk (or half-and-half), sour cream, salt, and pepper, and mix everything thoroughly.
06 - After 30 minutes in the oven, pull the meatloaf out and carefully drain away any excess grease.
07 - Spread the mashed potatoes over the meat layer, then sprinkle crumbled bacon and loads of shredded cheddar cheese on top.
08 - Pop it back in the oven for another 15 minutes. You want the cheese to melt completely and the dish to heat through.
09 - Take it out of the oven, give it a few minutes to cool slightly, then dish it out and enjoy.

01 - Swap the ground beef for turkey if you’re looking for a lighter option.
02 - You can make this ahead and stick it in the fridge before the last baking step.
