Meatballs in Tomato Maple Sauce (Print Version)

# Ingredients:

→ Meatballs

01 - 500g (17.6oz) extra lean ground beef
02 - 30g (1oz) fresh breadcrumbs
03 - 2 tablespoons 2% milk
04 - 1 large egg
05 - 1 teaspoon salt
06 - 1/2 teaspoon black pepper
07 - 1/2 teaspoon onion powder
08 - 1/2 teaspoon garlic powder

→ Sauce Base

09 - 1 small onion, chopped
10 - 1/2 red pepper, finely chopped
11 - 2 cloves garlic, crushed
12 - Low calorie cooking spray
13 - 1/2 tablespoon paprika

→ Sauce

14 - 1 cup (240g) passata
15 - 1 tablespoon tomato paste
16 - 1 cup (240ml) chicken stock
17 - 2 tablespoons maple syrup
18 - 1 tablespoon balsamic vinegar

# Instructions:

01 - Soak breadcrumbs in milk until absorbed. Mix with ground beef, egg, and seasonings until well combined.
02 - Shape mixture into 16 equal-sized meatballs.
03 - Sauté peppers, onion, and garlic in cooking spray until softened.
04 - Add passata, tomato paste, paprika, stock, maple syrup, and balsamic vinegar. Bring to boil.
05 - Add meatballs to sauce, cover and simmer 20-25 minutes until cooked through and sauce thickens.
06 - Remove lid for final 5 minutes to reduce sauce. Serve hot.
