Low-Carb Chicken Casserole (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 cups cooked chicken breast, diced or shredded
02 - 8 slices bacon, cooked and chopped
03 - 5 cups broccoli florets (or 1 pound thawed frozen spinach, well-drained)
04 - 3 cloves garlic, minced
05 - 1 cup ranch dressing

→ Cheese Mixture

06 - 1/2 cup shredded mozzarella cheese
07 - 1/2 cup shredded cheddar cheese

→ Topping

08 - 1/2 cup shredded mozzarella cheese
09 - 1/2 cup shredded cheddar cheese

# Instructions:

01 - Preheat oven to 375°F. If using frozen spinach, thaw and squeeze out excess water. If using fresh broccoli, boil for 1-2 minutes until bright green, then drain.
02 - Mix chicken, bacon, vegetables, garlic, ranch dressing, and half of the cheese in a bowl until well combined.
03 - Transfer mixture to a 9x13-inch casserole dish.
04 - Sprinkle remaining mozzarella and cheddar cheese evenly over the top.
05 - Bake for 15 minutes until hot and bubbly. Let cool slightly before serving.

01 - Can use either broccoli or spinach based on preference
02 - Make sure frozen spinach is well-drained to prevent watery casserole
