Loco Chicken Rice (Print)

One pan is all you need for chicken, saffron rice, and oozy queso. Ready to serve in 30 minutes.

# Ingredients:

01 - 2 teaspoons of olive oil.
02 - 1 cube of tomato bouillon.
03 - 1.5 pounds of chicken breast.
04 - 10 ounces of saffron rice, yellow.
05 - 3 ounces of queso dip, white.
06 - 2 tablespoons of milk.
07 - 1 teaspoon of adobo seasoning.
08 - 2 and a half cups of water.

# Steps:

01 - Dry the chicken with paper towels, rub on adobo seasoning.
02 - Using oil, cook the seasoned chicken until browned. Takes about 6 minutes total.
03 - Toss in the rice, water, and bouillon. Boil first, then cover and let it simmer for 20 to 25 minutes.
04 - Add queso and milk to the rice. Use a fork to mix lightly.

# Notes:

01 - Cover the pot vent to make sure the rice cooks right.
02 - Pick queso from the fridge for a fresher taste.
03 - Slice the chicken across the grain for tender pieces.
