Lemon Butter Baked Cod (Print Version)

# Ingredients:

01 - 4 pieces of cod (6 oz each)

→ Creamy Lemon Sauce

02 - 1/4 cup (60g) melted unsalted butter
03 - 2 tablespoons olive oil
04 - Juice of 1 lemon (about 3 tablespoons)
05 - 3 minced garlic cloves
06 - 1 teaspoon grated lemon peel
07 - 1/2 teaspoon paprika powder
08 - 1/2 teaspoon dried thyme (or double the amount if fresh)
09 - A bit of salt and pepper to taste

→ Topping and Extras

10 - 2 tablespoons finely chopped parsley
11 - Lemon wedges for decoration

# Instructions:

01 - Set your oven to 400°F (200°C). Coat a baking dish lightly with cooking spray or a bit of olive oil.
02 - Grab a small bowl and whisk butter, olive oil, lemon juice, garlic, zest, paprika, thyme, salt, and pepper together.
03 - Line up the cod fillets in the baking dish, keeping them spread out. Pour the butter sauce over each fillet evenly so they’re covered.
04 - Pop the dish into the oven for 12-15 minutes. The cod’s done when it flakes apart and turns solid white. Thicker pieces might need more time.
05 - Sprinkle parsley on top and add lemon slices for garnish. Serve while it’s still warm alongside salad, veggies, or some rice.
