Leftover Chicken Fix (Print)

Turn those chicken leftovers into a creamy, cheesy pasta with Parmesan, spinach, and sweetcorn—all done in no time.

# Ingredients:

01 - 20g grated Parmesan.
02 - 45g fresh spinach.
03 - 100g canned sweetcorn.
04 - 60ml reduced-fat milk.
05 - 100g low-fat cream cheese.
06 - 0.5 tablespoon of olive oil.
07 - 180g chopped cooked chicken.
08 - 150g dry pasta.

# Steps:

01 - Boil pasta in hot water for about 10 minutes.
02 - Warm up olive oil in a pan over medium heat, toss in chicken, and cook for 5 minutes until golden.
03 - Pour milk and add cream cheese to the chicken. Stir often until the cheese is completely melted.
04 - Add Parmesan, spinach, and sweetcorn. Keep stirring lightly until spinach softens.
05 - Drain the pasta but save a little of the water. Stir the pasta and water into the pan with chicken and mix until it’s covered in sauce. Adjust seasoning as needed.

01 - Fresh pasta cooks quicker.
02 - Pasta water helps smooth out the sauce.
03 - Want it spicy? Toss in some chili flakes.
