Italian Fried Rice (Print Version)

# Ingredients:

→ Main Ingredients

01 - 3 cups of cooked long-grain rice, at least a day old
02 - 1 cup of halloumi, diced into small cubes
03 - 3 slices of thinly cut rosemary ham, chopped up
04 - 3 slices of salami, cut into small pieces
05 - 3 slices of mortadella, diced finely
06 - Half of a small onion, finely diced
07 - 1 egg

→ Vegetables and Herbs

08 - A handful of romaine, roughly chopped for garnish
09 - 1/4 cup of diced roasted red bell peppers
10 - 1/4 cup of diced banana peppers
11 - A small bunch of basil leaves, chopped finely

→ Sauces and Oils

12 - A drizzle of olive oil to cook with
13 - 2 tablespoons of sesame oil
14 - 2 tablespoons balsamic vinegar, and more for serving
15 - 2 tablespoons soy sauce

# Instructions:

01 - Start by heating up a pan with some olive oil over high heat. Toss in the onions and cook for about 5 minutes. Add your diced halloumi, cooking it for another 5 minutes until it gets golden on the edges.
02 - Next, throw in all your chopped meats and cook them for 3 to 5 minutes until they get a bit browned.
03 - Add your day-old rice to the pan, giving it a quick stir every now and then. Let it cook for around 5 minutes.
04 - Create a little open spot in the middle of the pan, crack in the egg, scramble it quickly, and mix it into the rice.
05 - Mix in the rest of the ingredients and cook for another 5 minutes. Serve with some chopped romaine on top and a drizzle of balsamic to finish.

# Notes:

01 - Rice that's a day old works best because it's a bit drier.
02 - Feel free to mix up which Italian cold cuts you use!
03 - This is a perfect meal idea to put leftover rice to good use.
