Mini Italian Sandwiches (Print)

Freshly baked brioche rolls filled with cured Italian meats, creamy provolone, and zesty olive topping.

# Ingredients:

→ Brioche Rolls

01 - Warm 2/3 cup (151g) whole milk to about 105°F
02 - 7g (2 1/4 teaspoons) active dry yeast
03 - Divide 1 teaspoon and 2 tablespoons of white sugar
04 - Use 3 1/4 cups (390g) all-purpose flour
05 - 2 room temperature large eggs
06 - 1 1/2 teaspoons of fine salt
07 - 1 egg for brushing
08 - Optional: Sprinkle sesame seeds
09 - 1 tablespoon melted butter to brush on top

→ Olive Topping

10 - Chop 1/2 cup green olives into small bits
11 - Dice 1/2 cup kalamata olives finely
12 - Finely chop 3 pepperoncinis
13 - Add 1 tablespoon minced parsley
14 - Chop 2 teaspoons fresh basil finely
15 - Use 1 thyme sprig
16 - Grate 1 clove of garlic
17 - Sprinkle 1/4 teaspoon black pepper
18 - Mix in 1 teaspoon honey
19 - Pour in 1/4 cup extra-virgin olive oil
20 - Add 2 tablespoons balsamic vinegar

→ Sandwich Fillings

21 - Cut 6 slices of provolone cheese in half
22 - Use 6-12 slices of mortadella
23 - 18 slices of salami
24 - 6-12 slices of black forest ham
25 - 18 slices of pepperoni

# Steps:

01 - Stir together the warm milk, yeast, and 1 teaspoon of sugar. Wait 5-7 minutes for it to bubble and foam.
02 - Mix the flour, salt, eggs, leftover sugar, melted butter, and the foamed yeast mixture. Keep kneading for 15-20 minutes until it's stretchy and smooth in the windowpane test.
03 - Cover the bowl and let the dough puff up in a warm spot for an hour until it doubles in size.
04 - Cut the dough into 12 pieces (about 61g each). Roll each one into a ball or log shape, then place them into a greased 9x13 pan.
05 - Allow the rolls to rise for 30-45 minutes. Brush on the egg wash, sprinkle with sesame seeds if you want, and bake at 375°F for around 16-20 minutes.
06 - Throw all the olive topping ingredients in a bowl, mix well, and chill for 20 minutes so the flavors can blend together.
07 - Split the rolls in half, stack on your cheese slices and choice of meats, then spoon the olive topping over everything.

# Notes:

01 - Store-bought rolls work if you'd rather not bake your own
02 - Your sandwiches will last in the fridge for about 3 days
03 - Feel free to swap out the meats or cheeses however you like
