In a hot skillet, crumble and cook sausage until browned. Remove with a kitchen tool like a slotted spoon.

In the same pan, soften hashbrowns with peppers and onions for about 5 minutes.

Whisk together your eggs, milk, salt, and pepper. Add the cooked sausage, veggies, and 2 cups of cheese.

Pour it in the baking dish, sprinkle on the rest of the cheese, then pop it in the oven. Cook until it sets, around 55 minutes.
