Cowboy Stew (Print Version)

# Ingredients:

01 - 1 cup water.
02 - 2 tbsp parsley, chopped.
03 - 2 medium russet potatoes, cubed and peeled.
04 - 1 (15 oz) can sweet corn, liquid included.
05 - 1 (7 oz) can green chilies, diced with liquid.
06 - 2 (16 oz) cans baked beans, liquid included.
07 - 1 (14.5 oz) can diced tomatoes, liquid included.
08 - 1 tsp chili powder.
09 - 1/2 tsp ground black pepper.
10 - 1.5 tsp salt.
11 - 3 tbsp plain flour.
12 - 3 garlic cloves, finely minced.
13 - 1 onion, medium, diced small.
14 - 1.5 lbs 80/20 ground beef.
15 - 2 (12 oz) packages kielbasa, sliced.
16 - 4 strips bacon, chopped into pieces.

# Instructions:

01 - Chop up your bacon and toss it in a big pot over medium heat. Let it sizzle until it's crispy, then pull it out and set it aside.
02 - Throw the kielbasa slices into the same pot with the bacon grease and cook both sides until browned. Take them out and set them aside too.
03 - In that same pot, toss in the ground beef, onions, and garlic. Stir and break up the beef while it cooks until it's fully browned and there's no more pink.
04 - Sprinkle everything with your flour, salt, pepper, and chili powder. Mix it all together and let it cook for another minute or so.
05 - Now add your diced tomatoes, baked beans, green chilies, sweet corn, potatoes, bacon, kielbasa, and a cup of water. Pour in all the liquids from the cans too.
06 - Bring it up to a boil, then turn the heat way down. Cover it and let it slowly simmer for about an hour. Give it a stir now and then, and add more water if it gets too thick.
07 - Dish it out nice and hot, and finish it off by sprinkling the parsley on top.

01 - This hearty dish is perfect for feeding a lot of people and lets you swap in other beans or veggies if you'd like.
02 - You can crank up the heat by using more chili powder or splashing in your favorite hot sauce.
03 - Leftovers stay fresh in the fridge for up to 4 days or freeze them for later.
