Family Dinner Bake (Print)

An easy dish with cheesy hashbrowns, juicy chicken, veggies, all finished with a buttery Ritz topping.

# Ingredients:

→ Main Ingredients

01 - Roughly 8 ounces (3 cups) of thawed, frozen hash browns
02 - 2-3 cups of diced, cooked chicken
03 - 1 cup of shredded cheddar cheese
04 - 1/4 cup of bacon bits
05 - 10.5 ounces of condensed cream of chicken soup (1 can)
06 - Half a cup of milk
07 - 12 ounces of thawed, frozen veggies
08 - Pinch of dried thyme (about 1/8 teaspoon)

→ Topping

09 - Crush about half a sleeve (12-14) of Ritz crackers
10 - Half a cup of shredded cheddar cheese

# Steps:

01 - Set your oven to 400°F (200°C) and let it warm up.
02 - Mix the hash browns, thyme, chicken, soup, cheddar cheese (1 cup), veggies, bacon bits, and milk in a big bowl until everything is combined.
03 - Grease your baking dish lightly (7x11-inch or similar). Spread the hash brown mixture into the dish evenly.
04 - In a small bowl, stir together the shredded cheese (1/2 cup) and crushed crackers. Spread this mixture over the casserole.
05 - Cover the dish with foil and bake it for 30 minutes.
06 - Take off the foil and bake another 15 minutes till the top is crispy and golden, and the casserole is bubbling.
07 - Let the dish cool for about 10–15 minutes before serving. Enjoy your meal!

# Notes:

01 - Rotisserie chicken leftovers work great, or you can poach fresh chicken quickly.
02 - For a bit of heat, toss in hot sauce or sprinkle in some red pepper flakes.
03 - Freeze before baking if you'd like. Wrap tightly, and it keeps for around 3 months.
