Greek Chicken Bowls (Print)

Flavorful chicken bowls with creamy tzatziki, crisp veggies, and tangy feta.

# Ingredients:

→ Chicken & Marinade

01 - 1 tablespoon Greek seasoning mix
02 - 1/4 teaspoon fine sea salt
03 - 2 tablespoons fresh lemon juice
04 - 3 tablespoons extra-virgin olive oil
05 - 1 pound chicken breast, cut into cubes
06 - 1 tablespoon red wine vinegar

→ Tzatziki Sauce

07 - 8 oz full-fat plain Greek yogurt
08 - 2 cloves of garlic, finely grated
09 - 1 lemon, juice and zest
10 - 1/2 a grated Persian cucumber
11 - 2 tablespoons chopped dill leaves

→ Salad Components

12 - 4 oz block of feta cheese
13 - 1/2 cup sliced red onion
14 - 1 cup halved cherry tomatoes
15 - 1 Persian cucumber, chopped small
16 - 1/3 cup Kalamata olives, pitted

# Steps:

01 - Toss the chicken with the oil, vinegar, lemon, and seasonings. Let it sit for at least 30 minutes or up to overnight.
02 - Stir together the yogurt, cucumber, garlic, dill, and lemon. Keep it cold till ready to use.
03 - Sear the chicken in a cast-iron pan on medium for 3-4 minutes a side, or until you hit 165°F inside.
04 - Blend oil, vinegar, oregano, and a pinch of salt using a whisk.
05 - Split the cooked chicken into bowls, toss in veggies and olives, sprinkle with feta, then add the dressing and tzatziki.
