Rub both sides of the chicken with salt and pepper. Go for it, use a generous amount!

Warm up the olive oil in a big pan over medium-high heat. Place the chicken in once it’s hot and let it sear for 5-6 minutes on each side, until golden and crispy.

After the chicken has cooked through, take it out and rest it on a plate. Don’t worry, you’ll come back to it soon.

Drop the minced garlic into the same pan, lower the heat a bit, and stir around for about 30 seconds. Make sure it smells good but doesn’t burn!

Slowly stir in the cream, followed by the Italian seasoning and parmesan. Mix it all together until it’s smooth and starts to thicken up.

If using spinach, add it now. Let it simmer for a couple of minutes so it wilts nicely into the sauce.

Pop the chicken back into the pan and spread the creamy garlic sauce over it. Let it simmer for another minute so the flavors soak in.

Move the chicken onto plates, making sure to scoop lots of sauce on top. It pairs perfectly with mashed potatoes, roasted veggies, or pasta.
