Preheat the oven to 400°F and line two baking sheets with parchment paper.

Roll out the puff pastry to flatten slightly. Use a 2-inch cookie cutter to cut circles from the dough.

Place pastry rounds on the baking sheets and press your thumb into the center of each round to create an indentation.

Add about 1 tablespoon of goat cheese into each indentation.

Bake for 8–10 minutes until the pastry is golden brown.

Drizzle each piece with ½ teaspoon of honey and sprinkle with fresh thyme. Serve warm.
