# Ingredients:

01 - 4 Russet potatoes, peeled and sliced
02 - 3 tablespoons olive oil
03 - 2 teaspoons kosher salt
04 - 1/2 teaspoon freshly ground black pepper
05 - 2 teaspoons garlic powder
06 - 2 teaspoons dried oregano
07 - 1/2 cup Parmigiano Reggiano cheese, freshly grated
08 - 2 tablespoons fresh parsley, chopped

→ Steak

09 - 1 New York Striploin steak
10 - Salt and pepper to taste
11 - 2 tablespoons beef tallow

→ Sauce and Garnish

12 - 1/2 cup lemon herb aioli
13 - Chives, finely chopped (optional)

# Instructions:

01 - Peel potatoes and cut into 1/4-inch strips. Soak in cold ice water for 10-15 minutes to remove excess starch.
02 - Season steak generously with salt and pepper. Let rest at room temperature.
03 - Preheat oven to 425°F. Drain and dry potatoes thoroughly. Toss with oil and seasonings.
04 - Spread fries on lined baking sheet. Bake 30 minutes, flipping halfway. Broil last 5 minutes for extra crispiness.
05 - While hot, toss fries with parmesan and parsley.
06 - Heat skillet over medium-high. Sear fat cap 1 minute, then each side 2-3 minutes. Rest 5-7 minutes before slicing.
07 - Arrange fries on platter, top with steak slices, drizzle with aioli, and garnish with chives.
