French Garlic Dish (Print Version)

# Ingredients:

01 - 1/2 cup Parmesan cheese, finely grated.
02 - 4 egg yolks, separated.
03 - 6 cups broth (chicken or vegetable).
04 - 2 bay leaves.
05 - 1 tablespoon olive oil.
06 - Salt and pepper, as needed.
07 - Freshly chopped parsley for topping.
08 - 2 sprigs fresh thyme.
09 - 2 tablespoons butter, unsalted.
10 - 1 onion, diced.
11 - 2 bulbs of garlic, peeled.

# Instructions:

01 - In your pot, toss in butter and oil. Once warm, fry the onion until soft, around 5 minutes. Add garlic to the mix and cook another couple minutes.
02 - Pour in the broth and drop in thyme and bay leaves. Let it boil. Afterward, reduce heat to simmer for half an hour. Take out the herbs before moving on.
03 - Stir in as much salt and pepper as you like. Taste as you go.
04 - Mix egg yolks and Parmesan together in a bowl. Slowly add some hot soup to the egg mix to warm it up, then pour it back into the full pot. Cook for another 5 minutes, stirring until it thickens.

01 - Warm eggs slowly with hot soup to avoid them scrambling.
02 - Freeze the soup before adding the eggs if needed.
03 - Vegetable broth works great for a meat-free option.
