Fudgy Cosmic Brownies (Print Version)

# Ingredients:

→ Brownies

01 - 1 1/2 cups white granulated sugar
02 - 1/2 cup powdered sugar
03 - 3 large eggs, room temperature
04 - 1 egg yolk, room temperature
05 - 1/2 cup unsalted butter, melted
06 - 1/2 cup canola or vegetable oil
07 - 1 teaspoon pure vanilla extract
08 - 3.5 ounces semi-sweet chocolate bar (78%), melted
09 - 1 cup all-purpose flour
10 - 1 cup unsweetened cocoa powder
11 - 1 tablespoon cornstarch
12 - 1 teaspoon salt

→ Ganache and Topping

13 - 1 cup semi-sweet chocolate chips
14 - 1/2 cup heavy cream
15 - Rainbow candy coated chocolates for topping

# Instructions:

01 - Preheat oven to 350°F. Line 9x9 inch pan with parchment paper and spray with nonstick spray.
02 - Combine flour, cocoa powder, cornstarch, and salt in medium bowl. Melt chocolate bar in microwave at 20-second intervals.
03 - Beat sugars, eggs, and yolk on high for 3 minutes until pale and fluffy.
04 - Mix in melted butter, oil, vanilla, and melted chocolate. Add dry ingredients and mix until just combined.
05 - Pour into pan and bake 33-37 minutes until toothpick has moist crumbs. Cool completely.
06 - Heat cream until steaming, pour over chocolate chips, let sit 2 minutes, then stir until smooth.
07 - Pour ganache over brownies, spread to edges, top with candy chocolates. Chill to set.

01 - Spoon and level flour for best results
02 - For high altitude, add 1 tablespoon extra flour
03 - Brownies should be slightly underbaked
