Fudgy Bean Brownies (Print Version)

# Ingredients:

→ Main Ingredients

01 - 3 large eggs
02 - 1 (15-oz) can of black beans, drained and rinsed (425g)
03 - 1 teaspoon vanilla extract
04 - 3 tablespoons neutral-tasting oil (like vegetable or canola)

→ Powdered Ingredients

05 - ½ teaspoon baking powder
06 - ⅔ cup granulated sugar (120g)
07 - ¼ teaspoon salt
08 - ¼ cup cocoa powder, unsweetened (30g)
09 - Optional: ½ teaspoon instant coffee or fine coffee grounds

→ Extras

10 - ½ cup semi-sweet chocolate chips (60g)

# Instructions:

01 - Set your oven to 350°F (176°C). Toss black beans into a food processor and blitz until smooth. In a big mixing bowl, combine the bean mixture with eggs, oil, and vanilla extract.
02 - In another bowl, mix together baking powder, sugar, salt, cocoa powder, and coffee (if you'd like). Pour this into the wet mixture and stir it all up. Toss in the chocolate chips last.
03 - Get an 8x8 or 9x9 inch pan. Line it with parchment and grease it lightly. Pour the batter in and bake for about 30-40 minutes, until the edges are cooked and the center is mostly firm.
04 - Let the brownies cool completely before you slice them up.
