Fried Rice Italian-Style (Print)

Fried rice with a fun Italian twist—cured meats, salty halloumi, and tangy peppers come together for an easy meal.

# Ingredients:

→ Main Ingredients

01 - 1 egg
02 - 1 cup halloumi, cut into small cubes
03 - 3 cups day-old long-grain rice
04 - 1/2 a small onion, diced
05 - 3 slices rosemary ham, chopped into pieces
06 - 3 slices of salami, chopped up
07 - 3 slices of mortadella, diced

→ Vegetables and Herbs

08 - About 1/4 cup diced roasted red peppers
09 - 1/4 cup basil, roughly chopped
10 - 1/4 cup diced banana peppers
11 - Roma lettuce, chopped, for plating

→ Sauces and Oils

12 - A splash of olive oil for frying
13 - 2 tablespoons of balsamic for cooking and more for garnish
14 - 2 spoonfuls of soy sauce
15 - 2 tablespoons of sesame oil

# Steps:

01 - In a hot skillet with olive oil, cook the onion for 5 minutes. Toss in the halloumi cubes and fry until the edges get golden, about 5 more minutes.
02 - Drop in the diced meats. Let them sizzle in the pan, stirring occasionally, until the edges crisp up a little, 3–5 minutes.
03 - Add the leftover rice to the meat and cook for 5 minutes, mixing every so often so it heats evenly.
04 - Push the rice to one side, crack the egg into the cleared spot, scramble it quickly, and then toss it all together.
05 - Stir in the rest of the ingredients and let it all cook for another 5 minutes. Dish up with lettuce and a drizzle of balsamic vinegar on top.

# Notes:

01 - Old rice keeps the dish from getting mushy
02 - Switch up the meats with your faves
03 - Perfect dish to use up yesterday’s rice
