French Sweet Crepes (Print)

Thin and airy crepes made with a basic mixture. Ideal canvas for sweet fillings and toppings.

# Ingredients:

01 - 1 1/3 cups all-purpose flour.
02 - 2 cups milk (whole, skim, or low-fat).
03 - 1 tablespoon of sugar.
04 - 4 large eggs.
05 - 1/3 teaspoon salt.
06 - 1/4 cup of cooking oil.
07 - Butter to coat the pan.

# Steps:

01 - Combine everything except the butter by whisking or blending until smooth.
02 - Set a frying pan on medium to medium-high heat and add a thin layer of butter.
03 - Pour about 1/4 cup of batter into the pan and tilt it so the batter covers the surface thinly.
04 - Let it cook for a minute or so per side on moderate heat. Continue until you use up all the batter.

# Notes:

01 - You only need to butter the pan at the start.
02 - Coconut oil works just as well for greasing instead of butter.
