Set your oven to 400°F and give it a chance to completely warm up before baking.

On medium heat, brown sausage in a nonstick skillet, breaking it apart as it cooks for 5 minutes. Once cooked through, let it cool for about 10 minutes.

Grab a big bowl and toss in the eggs, butter, and your cooled sausage. Whisk all that together until the egg mixture is smooth.

Dump flour and baking powder into the wet mixture. Stir rather firmly until the batter is smooth and there aren't dry streaks left.

Carefully mix in the chilies and cheese. Fold it all together so they're spread evenly in the batter without overmixing.

Spoon 12 dollops of batter using a cookie scoop or large spoon onto a baking sheet. Pop them into the oven for around 10 minutes, pulling them out when the centers are set.
