Sausage Breakfast Bites (Print Version)

# Ingredients:

01 - 2 teaspoons baking powder
02 - 1 3/4 cups plain flour
03 - 2 tablespoons melted salted butter
04 - 6 large eggs
05 - 1 (7 ounce) can chopped green chilies
06 - 1 1/2 cups sharp cheddar cheese, grated
07 - 1 pound breakfast sausage, ground

# Instructions:

01 - Set your oven to 400°F and give it a chance to completely warm up before baking.
02 - On medium heat, brown sausage in a nonstick skillet, breaking it apart as it cooks for 5 minutes. Once cooked through, let it cool for about 10 minutes.
03 - Grab a big bowl and toss in the eggs, butter, and your cooled sausage. Whisk all that together until the egg mixture is smooth.
04 - Dump flour and baking powder into the wet mixture. Stir rather firmly until the batter is smooth and there aren't dry streaks left.
05 - Carefully mix in the chilies and cheese. Fold it all together so they're spread evenly in the batter without overmixing.
06 - Spoon 12 dollops of batter using a cookie scoop or large spoon onto a baking sheet. Pop them into the oven for around 10 minutes, pulling them out when the centers are set.

01 - Store leftovers in the fridge for up to 4 days.
02 - Skip the chilies if you’re not a fan.
