Breakfast Croissants (Print)

Golden croissants brimming with scrambled eggs, gooey cheese, smoky bacon, ham, and a touch of honey mustard. These are fantastic for brunch or keeping ahead of busy mornings!

# Ingredients:

→ For the Spread

01 - 2 tablespoons honey
02 - 2 tablespoons salted butter
03 - 2 tablespoons dijon mustard

→ For the Sandwiches

04 - 8 slices cooked bacon
05 - 1/2 pound deli-sliced ham
06 - 4 large croissants
07 - 8 slices cheese (options like gouda, cheddar, baby swiss, etc.)

→ For the Eggs

08 - Splash of milk
09 - 5 large eggs
10 - Salt and pepper
11 - Fresh chives for topping (optional)
12 - 1 tablespoon butter

# Steps:

01 - Set your oven to 350°F so it preheats.
02 - Mix the mustard, butter, and honey in a small bowl. Heat it in the microwave for about 20 seconds until the butter melts, then stir it all together.
03 - Using a serrated knife, cut each croissant in half horizontally. Brush the inside of each half with your honey dijon mix.
04 - On the bottom half of each croissant, layer a slice of cheese, then ham, some bacon, and top with another slice of cheese. Place the top half of the croissant back on and arrange them on a baking sheet.
05 - Put the baking sheet in the oven and bake for 10-15 minutes, until the croissants turn golden and the cheese melts.
06 - While the croissants are baking, whisk the eggs together with milk, salt, and pepper. Heat butter in a skillet over medium heat and cook the eggs, stirring often, until they’re soft scrambled (about 2-3 minutes).
07 - Take the croissants out of the oven and add the scrambled eggs to each sandwich. If you like, sprinkle fresh chives over the top before serving.
