Crispy Rice Bites (Print Version)

# Ingredients:

→ Rice Base

01 - 1 teaspoon of salt
02 - 1 ¼ cups of water
03 - 1 cup of sushi rice, uncooked

→ Seasoning

04 - 2 teaspoons of granulated sugar
05 - 1.5 tablespoons of rice vinegar

→ For Frying

06 - ½ cup of olive oil for frying

→ Optional

07 - Furikake or sesame seeds, for garnish

# Instructions:

01 - Give the rice a rinse until the water runs clear. Cook it with the measured water and salt until soft, then let it sit covered for 10 minutes.
02 - Take the rice vinegar and sugar, mix them together, and stir into your cooked rice.
03 - Line an 8x8 baking dish and press the rice into it. Chill it in the fridge for about an hour until it sets properly.
04 - Cut your chilled rice into squares. Sprinkle on sesame seeds if you’d like.
05 - Heat up the oil in a pan and fry each piece for 3-4 minutes per side until nice and crispy.

# Notes:

01 - Works best if you use proper sushi rice
02 - You can prep everything the day before
03 - Stays good for up to 2 days when kept in the fridge
