Crispy Cheesy Bites (Print)

Crisp-coated potato balls with a melty, cheesy heart. These snacks are a breeze to make and work great as appetizers or anytime treats!

# Ingredients:

01 - 2 eggs, whisked.
02 - ½ tsp garlic powder.
03 - Kosher salt and black pepper, adjust to taste.
04 - 1⅓ cups panko crumbs for coating.
05 - 3 strips of bacon, cooked and broken into bits.
06 - Vegetable oil for frying.
07 - ⅔ cup grated cheddar.
08 - 2 tbsp chopped chives.
09 - 3 cups mashed potatoes, chilled or leftover.

# Steps:

01 - Grab a large bowl and toss in the mashed potatoes, bacon pieces, cheddar cheese, chives, garlic powder, salt, and pepper. Mix well.
02 - Using your hands, roll the mixture into golf ball-sized portions, about 1-2 inches across.
03 - Dip each potato ball into the egg mixture first, then roll it around in the panko until evenly covered.
04 - If using a pan on the stove, heat 3 inches of oil to 375°F. Drop the balls into the hot oil a few at a time, frying for 2-3 minutes until golden. Drain on a towel after cooking.
05 - For air frying, arrange the balls in one layer inside the fryer. Cook at 375°F for around 10 minutes until crispy and golden.
