Grab a large bowl and toss in the mashed potatoes, bacon pieces, cheddar cheese, chives, garlic powder, salt, and pepper. Mix well.

Using your hands, roll the mixture into golf ball-sized portions, about 1-2 inches across.

Dip each potato ball into the egg mixture first, then roll it around in the panko until evenly covered.

If using a pan on the stove, heat 3 inches of oil to 375°F. Drop the balls into the hot oil a few at a time, frying for 2-3 minutes until golden. Drain on a towel after cooking.

For air frying, arrange the balls in one layer inside the fryer. Cook at 375°F for around 10 minutes until crispy and golden.
