Cheesy Potato Puffs (Print)

Golden potato bites packed with cheesy goodness and fresh chives. A clever way to reuse leftover mashed potatoes.

# Ingredients:

01 - 1/4 cup minced fresh chives.
02 - 3 eggs, beaten until smooth.
03 - Salt and black pepper.
04 - 2 cups mashed potatoes, at room temperature.
05 - 1 cup shredded Monterey Jack cheese, split.
06 - Sour cream to serve.

# Steps:

01 - Turn the oven to 400°F. Spray a 24-cup mini muffin pan lightly with oil.
02 - Combine the potatoes, eggs, most of the cheese (leave some for later), and chives. Add seasoning and stir well.
03 - Put spoonfuls of the mix into the muffin tray. Sprinkle with the leftover cheese.
04 - Bake for 15 to 20 minutes until the tops turn golden. Let them cool for 5 minutes before taking them out.
