Creamy Tuscan Chicken Pasta (Print)

Juicy spiced chicken and pasta in a velvety tomato cream sauce with fresh spinach. A restaurant-quality dinner made easy.

# Ingredients:

→ Chicken Spice Rub

01 - 4 chicken cutlets (or 2 chicken breasts, halved)
02 - 2 teaspoons garlic powder
03 - 2 teaspoons smoked paprika
04 - 2 teaspoons dried parsley or oregano
05 - 1 1/2 teaspoons salt
06 - 1/2 teaspoon black pepper

→ Pasta and Sauce

07 - 16 ounces rigatoni pasta
08 - 4 tablespoons oil
09 - 2 tablespoons butter
10 - 4 garlic cloves, minced
11 - 2 cups cherry tomatoes, halved
12 - 2 tablespoons tomato paste
13 - 2 cups heavy cream
14 - 2 tablespoons all-purpose flour mixed with 1/2 cup water
15 - 2 teaspoons garlic powder
16 - 2 teaspoons smoked paprika
17 - 1 cup fresh spinach, chopped
18 - Salt and pepper to taste

# Steps:

01 - Mix spice rub ingredients in a small bowl. Coat chicken cutlets evenly on both sides.
02 - Heat oil in large skillet over medium heat. Sear chicken 4-5 minutes per side until golden and cooked through. Remove and set aside.
03 - In same pan, add butter and minced garlic. Sauté 1 minute. Add tomatoes and cook 8-10 minutes until softened.
04 - Add tomato paste, then heavy cream. If needed, whisk flour and water separately, remove pan from heat, and gradually stir in to thicken.
05 - While sauce simmers 10 minutes, cook rigatoni in salted water until al dente. Drain and rinse briefly.
06 - Stir seasonings and spinach into sauce. Add pasta and toss to coat. Season with salt and pepper.
07 - Slice chicken and place on top of pasta. Serve immediately.
