Garlic Sage Soup (Print)

A creamy garlic treat mixed with fresh sage and finished with velvety mayo, giving you a bowl of pure cozy vibes.

# Ingredients:

01 - 8 cups of chicken stock or broth.
02 - Fresh bunch of sage leaves.
03 - One whole head of garlic, peeled and thinly sliced.
04 - 1 large egg, separate yolk (you only need that part).
05 - 2/3 cup of high-quality olive oil.
06 - 1 teaspoon of smooth Dijon mustard.
07 - Salt as needed.

# Steps:

01 - Add broth to a pot, toss in garlic and sage. Simmer gently for 10 minutes. You can strain it for a smoother soup if you'd like.
02 - In a bowl, combine the yolk, mustard, and salt. Slowly whisk oil in, turning it into a creamy, mayo-like consistency.
03 - Gradually stir the heated broth into the mayo mix. Then pour it all back into the pot on the stove.
04 - Gently heat the soup but don’t let it boil. Add toppings like croutons or a drizzle of olive oil if desired.

# Notes:

01 - Use low heat after mixing in the egg to avoid lumps.
02 - It's fantastic paired with a crunchy baguette for dipping.
03 - Vegetable stock works as a fine substitute to keep it vegetarian.
