Turn on your oven and preheat it to 350°F.

Use a blender to mix together the egg whites, cottage cheese, garlic, salt, garlic powder, and most of the cheese (leave some for later).

Set aside about two tablespoons of the peppers for garnish. Add the rest of the peppers and half the spinach to the mixture, then pulse a few times (3-4).

Coat your egg molds with some nonstick spray. Drop in some spinach, peppers, and shredded cheese at the bottom of each mold, and then fill it up to about 3/4 full with the egg mixture.

Place the molds in a wider pan filled with about 2 inches of warm water. Cover the top with foil and bake for an hour at 350°F.
