Egg Bites Starbucks Style (Print Version)

# Ingredients:

→ Base

01 - 6 large egg whites
02 - 1/4 cup creamy cottage cheese
03 - 4 oz of shredded Monterey Jack cheese

→ Veggies & Spices

04 - 1 minced garlic clove
05 - 1/2 tsp garlic powder
06 - 1/2 tsp fine salt
07 - 1/4 cup roasted red peppers, chopped
08 - 1 cup fresh spinach leaves
09 - Chopped green onions for topping

# Instructions:

01 - Turn on your oven and preheat it to 350°F.
02 - Use a blender to mix together the egg whites, cottage cheese, garlic, salt, garlic powder, and most of the cheese (leave some for later).
03 - Set aside about two tablespoons of the peppers for garnish. Add the rest of the peppers and half the spinach to the mixture, then pulse a few times (3-4).
04 - Coat your egg molds with some nonstick spray. Drop in some spinach, peppers, and shredded cheese at the bottom of each mold, and then fill it up to about 3/4 full with the egg mixture.
05 - Place the molds in a wider pan filled with about 2 inches of warm water. Cover the top with foil and bake for an hour at 350°F.
