New Orleans Classic (Print)

Chicken, sausage, and shrimp come together with Creole spices and rice to make this bold one-pot Southern comfort meal.

# Ingredients:

01 - 1 pound chicken breast, diced into small chunks.
02 - 1/2 pound shrimp, medium-sized, cleaned.
03 - 3 cloves garlic, finely chopped.
04 - 2 tablespoons unsalted butter.
05 - 2 bay leaves.
06 - 1 yellow onion, diced.
07 - 1 teaspoon Worcestershire sauce.
08 - 2 cups chicken stock.
09 - 2 tablespoons Cajun seasoning.
10 - 1-2 teaspoons spicy hot sauce.
11 - 1/2 pound andouille sausage, sliced into thin rounds.
12 - 3/4 teaspoon salt.
13 - 1 stalk celery, finely diced.
14 - 1 green bell pepper, diced.
15 - 1 (14.5 ounce) can of chopped tomatoes.
16 - 1 cup white long-grain rice.
17 - 4 green onions, thinly chopped.

# Steps:

01 - Mix chicken pieces with a tablespoon of Cajun seasoning in a bowl. Leave it to sit for now.
02 - Melt butter in a large pan over medium-high heat. Sear the chicken first, then toss in sausage slices and brown everything for about 3 minutes.
03 - Add celery, garlic, onion, and bell pepper to the pan. Let them cook and soften for a few minutes, around 3-4.
04 - Pour in your diced tomatoes, rice, the rest of the Cajun seasoning, sauces, broth, salt, and bay leaves. Let it heat until it boils.
05 - Turn down the heat. Cover the pan and let it cook gently for 15 minutes, stirring at least once. Toss in the shrimp at the end, cover again, and cook 10 more minutes until the rice is ready.

# Notes:

01 - Classic Cajun cooking uses a veggie combo often called the 'holy trinity.'
02 - For the best flavor, try mixing your own Cajun seasoning at home.
03 - Shrimp should always go in near the end to avoid getting rubbery.
