Throw eggs, warmed milk, and salt into a blender. Gradually add in the flour and blend it all together so it’s smooth. When that’s done, mix in the melted butter until it’s foamy. Let the batter chill out for 15 minutes while you warm up the oven.

Set your oven to 450°F. Move an oven rack down to the lower third and keep another one up at the top. Stick a popover pan on a baking tray and place it on the lower rack for 2 minutes to get it hot.

Carefully take the hot pan out and spray it really well with nonstick spray. Don’t forget to also coat the rims. Then, pour the batter evenly into the slots, filling them up nearly to the top.

Let them bake at 450°F for 20 minutes and resist the urge to open the door.

Turn the oven down to 350°F (still don’t open that door!) and let them bake another 10 minutes. They should rise tall, puff over, and turn a lovely golden brown color.

Take them out of the oven and poke the tops with a knife to let steam escape. Pull them out of the pan, slice them open, and serve with butter.
