Cinnamon French Toast Muffins (Print Version)

# Ingredients:

→ Base Mixture

01 - 4 large eggs
02 - 1 teaspoon ground cinnamon
03 - ¼ cup granulated sugar
04 - 1 cup whole milk
05 - 4 cups stale bread, cut into 1-inch pieces
06 - 2 teaspoons vanilla extract
07 - ½ cup heavy cream

→ Sweet Topping

08 - 2 tablespoons butter, melted
09 - ¼ cup granulated sugar
10 - 1 teaspoon ground cinnamon

# Instructions:

01 - Chop up your stale bread into bite-sized cubes, and set them aside for now.
02 - In a big bowl, mix together the eggs, milk, vanilla, cream, sugar, and cinnamon until it's all smooth and combined.
03 - Throw the bread pieces into the custard and gently mix until everything's soaked well. Leave it to sit for about 10 minutes so the bread can absorb the mixture.
04 - Fire up your oven to 350°F. Grease a standard muffin tray with butter or pop in paper liners.
05 - Spoon the soaked bread into each muffin tin section, pushing down gently. Combine sugar with cinnamon, drizzle butter over the muffins, and then go in with the sweet topping.
06 - Bake for around 20-25 minutes until the muffins are golden and firm. Let them rest in the tray briefly, then cool on a rack. They're best enjoyed warm with some maple syrup if you're feeling fancy.
