Christmas Pineapple Balls (Print Version)

# Ingredients:

01 - 3 oz packet of pineapple-flavored gelatin mix.
02 - ½ cup of graham cracker crumbs.
03 - 2 cups of fine unsweetened shredded coconut.
04 - 8 oz package of softened cream cheese.
05 - 398 mL can of crushed pineapple, drained well.

# Instructions:

01 - Use a large mixing bowl to beat the cream cheese until it’s nice and creamy.
02 - Toss in the drained pineapple, 1 cup of coconut, graham cracker crumbs, and the gelatin powder.
03 - Stir it all together so the ingredients are fully mixed.
04 - Pop the bowl in the fridge and let it chill for an hour so it sets up nicely.
05 - Scoop out the mixture, using about a tablespoon for each, and roll them into ball shapes.
06 - Take the remaining coconut and roll each ball in it to coat completely.
07 - Transfer the balls to a container and keep them in the fridge until you’re ready to enjoy.
