Use a large mixing bowl to beat the cream cheese until it’s nice and creamy.

Toss in the drained pineapple, 1 cup of coconut, graham cracker crumbs, and the gelatin powder.

Stir it all together so the ingredients are fully mixed.

Pop the bowl in the fridge and let it chill for an hour so it sets up nicely.

Scoop out the mixture, using about a tablespoon for each, and roll them into ball shapes.

Take the remaining coconut and roll each ball in it to coat completely.
