Throw the cottage cheese, vanilla, cocoa, and sweetener into your blender or food processor. Blend it until it's creamy and smooth. Check the sides and push everything down with a spatula if needed.

Melt some dark chocolate if you’re feeling fancy, and add that to your mixture. Blend again real quick to make it extra smooth and rich.

Scoop the mousse into bowls or ramekins. Pop them into the fridge for at least half an hour. This makes it set and get a thicker texture.

When you're ready to serve, sprinkle on cocoa powder, add a few berries, or throw on some chocolate shavings for that final flourish.
