Chocolate Chip Orange Ricotta Cookies (Print Version)

# Ingredients:

→ Cookie Dough

01 - 1 cup gluten-free flour
02 - 3/4 teaspoon baking powder
03 - 1 pinch sea salt
04 - 1/2 cup monkfruit sweetener with erythritol (or organic cane sugar)
05 - 4 tablespoons unsalted butter, softened
06 - 1 tablespoon orange zest
07 - 1 whole egg
08 - 1/4 cup ricotta
09 - 1/2 teaspoon pure vanilla extract
10 - 1/2 cup mini semi-sweet chocolate chips

→ Orange Glaze

11 - 3/4 cup powdered monkfruit sweetener (or organic powdered sugar)
12 - 1 teaspoon orange zest
13 - 2-3 tablespoons orange juice

# Instructions:

01 - Using a standing or hand mixer, beat softened butter and sweetener together. Mix in egg, vanilla, ricotta, and orange zest.
02 - Mix in dry ingredients until combined, then fold in chocolate chips.
03 - Cover dough and refrigerate for at least 1 hour or overnight.
04 - Use a 2 tablespoon cookie scoop to form balls. Place on cookie sheet without flattening.
05 - Bake at 350°F for about 13 minutes.
06 - Cool on baking sheet for 5 minutes, then transfer to wire rack. Whisk glaze ingredients together and top cookies. Let glaze set before serving.
