Chicken Pot Pie Soup (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil
02 - 1 pound boneless, skinless chicken breasts (about 2 larger breasts)
03 - 1 cup celery, diced
04 - 1 cup carrot, cut in 1/4 inch thick small circles
05 - 1 cup onion, finely chopped
06 - 1/2 tablespoon garlic, finely minced
07 - 2 cups Yukon gold potatoes, peeled and cut into 1 inch pieces
08 - 1 cup Yukon gold potatoes, peeled and cut into quarters (to be removed)
09 - 1/4 teaspoon pepper
10 - 1/4 teaspoon salt
11 - 1/4 teaspoon dried parsley
12 - 1/4 teaspoon dried basil
13 - 1/4 teaspoon dried rosemary
14 - 3 cups low-sodium chicken broth
15 - 1/2 cup milk of choice
16 - 1 tablespoon fresh parsley, for garnish

# Instructions:

01 - Set Instant Pot to sauté. Add oil and lightly sear chicken breasts about 2 minutes per side. Remove and set aside (will not be fully cooked).
02 - Add celery, carrot, onion, garlic, and seasonings. Sauté 2 minutes until slightly translucent. Add small cut potatoes.
03 - Place chicken breasts on vegetable mixture. Add large potato quarters on top. Pour in broth. Pressure cook on high for 9 minutes with 5 minute natural release.
04 - Remove large potato pieces and chicken. Blend potatoes with milk and 1/2 cup broth until smooth. Shred chicken. Return both to pot and stir to combine.
05 - Optionally sauté vegetables on stove. Layer raw chicken, vegetables, and potatoes in crockpot. Add broth. Cook on low for 6 hours.
06 - Remove large potatoes and chicken. Blend potatoes with milk and 1/2 cup broth until smooth. Shred chicken. Return both to pot and stir to combine.
07 - Sauté vegetables in oil. Add chicken, potatoes, and broth. Bring to boil, then simmer for 30 minutes on medium heat.
08 - Remove large potatoes and chicken. Blend potatoes with milk and 1/2 cup broth until smooth. Shred chicken. Return both to pot and stir to combine.

01 - Can use cooked chicken to speed up cooking time
02 - Warm broth before adding to speed up cooking
