Pineapple Chicken Rice (Print)

Simple one-pan meal made with chicken, pineapple, and rice. Ready in just 40 minutes. Great for a quick family dinner.

# Ingredients:

→ Meats & Fruits

01 - 1 cup pineapple chunks
02 - 1 pound diced chicken breast

→ Veggies

03 - 1 small onion, finely chopped
04 - 2 minced garlic cloves
05 - 1 red bell pepper, chopped into small pieces
06 - 1 teaspoon finely grated ginger
07 - 1/4 cup chopped green onion

→ Kitchen Staples

08 - 1 tablespoon of sesame seeds
09 - 2 cups of broth (chicken)
10 - 1 cup of jasmine rice
11 - 1 tablespoon of olive oil
12 - Salt and pepper to your liking
13 - 1 tablespoon of soy sauce

# Steps:

01 - Warm olive oil in your pan over medium heat, toss in chicken cubes, and cook till golden.
02 - Cook the onion, garlic, and bell pepper until they’re soft. Stir in pineapple chunks and let it cook for a couple of minutes.
03 - Mix rice, chicken broth, soy sauce, grated ginger, salt, and pepper in the pan. Let it boil, then lower the heat, cover it, and let it simmer for about 18-20 minutes.
04 - Add cooked chicken back into the pan, give it all a good stir, and sprinkle green onions and sesame seeds on top.
