Cook penne to al dente following package directions. Reserve 1/2 cup pasta water before draining.

Season diced chicken with salt and pepper.

Heat oil in large skillet over medium-high heat. Cook chicken 5-7 minutes until browned and cooked through.

Add marinara, seasonings, parmesan, pasta, and reserved water. Bring to boil, then simmer 4-5 minutes.

Remove from heat, top with mozzarella, cover, and let sit 5 minutes until cheese melts.
