Cheesy Spinach Chicken (Print)

Soft chicken breasts stuffed with a rich combo of spinach, feta, cream cheese, and mozzarella, flavored with fragrant seasonings.

# Ingredients:

01 - 4 tablespoons olive oil.
02 - 1 teaspoon salt.
03 - 4 ounces spinach, chopped fresh.
04 - 2 teaspoons smoked paprika.
05 - 1/2 teaspoon ground chili powder.
06 - 4 skinless chicken breasts (about 2 pounds).
07 - 1 teaspoon ground cumin.
08 - 2 ounces mozzarella, shredded.
09 - 4 ounces soft cream cheese.
10 - 2 ounces feta, crumbled.

# Steps:

01 - In a small bowl, stir together cumin, chili powder, salt, and paprika. Set this aside to season later.
02 - Combine cream cheese, feta, shredded mozzarella, and spinach in a bowl. Mash everything together until it turns into a thick paste.
03 - Use a sharp knife to cut a pocket into one side of each chicken breast. Be careful not to slice all the way through.
04 - Divide the cheese-spinach mixture equally into four portions. Stuff each chicken pocket with the filling and secure with toothpicks.
05 - Brush the chicken with olive oil, sprinkle the spice mixture over it, and bake in a 400°F oven for 25-30 minutes.
