Cheesy Beef and Potato Burritos (Print)

# Ingredients:

→ Potatoes

01 - 3 large potatoes
02 - Olive oil
03 - Salt
04 - Pepper
05 - Garlic powder

→ Beef filling

06 - 1 lb ground beef
07 - 1/2 tsp salt
08 - 1/2 tsp pepper
09 - 2 tsp chili powder
10 - 1 tsp cumin
11 - 1 tsp dried cilantro
12 - 1 tsp paprika
13 - 1/2 cup water
14 - 1 tbsp minced garlic

→ Assembly

15 - Nacho cheese
16 - 5 burrito-size flour tortillas
17 - Taco sauce

# Steps:

01 - Peel, wash, and cut potatoes into small cubes. Toss with olive oil, salt, pepper, paprika, and garlic powder in a large bowl.
02 - Place seasoned potatoes in an air fryer at 400°F for 25 minutes, shaking occasionally during cooking until crispy.
03 - In a large skillet over medium-high heat, cook ground beef. Season with salt, pepper, chili powder, cumin, dried cilantro, and paprika. Drain excess grease if necessary, add 1/2 cup water, and stir. Reduce heat to low and keep warm until potatoes are done.
04 - Lay out a large tortilla. Add a layer of nacho cheese, a scoop of beef, some taco sauce, and a scoop of crispy potatoes. Top with additional nacho cheese and roll up into a burrito.
05 - In a skillet over medium-high heat, cook assembled burritos until golden brown on all sides.
