Peel, wash, and cut potatoes into small cubes. Toss with olive oil, salt, pepper, paprika, and garlic powder in a large bowl.

Place seasoned potatoes in an air fryer at 400°F for 25 minutes, shaking occasionally during cooking until crispy.

In a large skillet over medium-high heat, cook ground beef. Season with salt, pepper, chili powder, cumin, dried cilantro, and paprika. Drain excess grease if necessary, add 1/2 cup water, and stir. Reduce heat to low and keep warm until potatoes are done.

Lay out a large tortilla. Add a layer of nacho cheese, a scoop of beef, some taco sauce, and a scoop of crispy potatoes. Top with additional nacho cheese and roll up into a burrito.

In a skillet over medium-high heat, cook assembled burritos until golden brown on all sides.
