Cheesecake Strawberry Cookies (Print)

Chewy cookies bursting with sweet strawberries and smooth cream cheese. A mashup of two amazing desserts in one bite.

# Ingredients:

01 - 1/2 cup regular sugar.
02 - A stick of butter, at room temp.
03 - 1/2 cup light brown sugar.
04 - 1 large egg, cracked.
05 - 1 teaspoon vanilla.
06 - 1/2 teaspoon baking soda.
07 - 1 3/4 cups plain flour.
08 - 1/4 teaspoon baking powder to puff them up.
09 - 1/4 teaspoon salt to balance flavors.
10 - 4 ounces softened cream cheese.
11 - 1/2 cup crushed freeze-dried strawberries.
12 - 2 tablespoons sugar for filling.
13 - 1 teaspoon vanilla, for filling.
14 - 1/4 cup strawberry jam.

# Steps:

01 - Combine cream cheese, jam, sugar, and vanilla until it's creamy. Pop it in the fridge to chill.
02 - Mix butter with white and brown sugars. Stir in egg and vanilla until it’s all smooth.
03 - Mix flour, soda, powder, and salt. Slowly add this to the wet combo.
04 - Mix in the crushed berries and stick the dough in the fridge for 30 minutes.
05 - Take chunks of dough, flatten, add filling, pinch closed, then roll up.
06 - Put on a parchment-covered tray and bake at 350°F for 12-15 minutes. Watch for golden edges.

# Notes:

01 - Chill dough up to a day in advance.
02 - Keep finished cookies in the fridge.
03 - You can freeze these for 2 months.
04 - For a soft center, warm before eating.
