Mix cream cheese, sugar, a bit of vanilla, and the strawberry jam in a bowl until it's completely blended. Put it in the fridge while you work on the dough.

Use a big bowl to beat softened butter, white sugar, and brown sugar until the mixture is fluffy. Toss in the egg and vanilla, then mix well.

In another bowl, stir together the flour, baking soda, baking powder, and salt. Gradually add this mix to the wet mixture until your dough comes together. Stir in the crushed strawberries.

Pop the dough into the fridge and leave it to chill for about half an hour.

Get your oven going at 350°F (175°C). Lay some parchment paper on your baking sheet.

Scoop 1 tbsp of dough, flatten it a bit, and spoon about 1/2 tsp of the cheesecake filling onto it. Flatten another scoop, place it on top, and stick the edges together before rolling it into a ball.

Put the cookie balls on your tray, giving them enough space, and bake for 12 to 15 minutes. Take them out when the edges turn a light golden color.

Leave them to cool down on the tray for a bit, then move them to a rack to finish cooling.
