Turn the oven on to 350°F (175°C).

Let the cookie dough sit in the freezer for a few hours so it's easier to cut.

Cover a 13x9" baking pan with non-stick foil or parchment paper.

Slice half the dough into ¼" rounds and press it all over the bottom of your pan. Bake it for 10 minutes.

Whisk together the cream cheese, egg, sugar, vanilla, and lemon juice (optional) until completely smooth. Evenly spread it over the partially baked crust.

Cut the remaining cookie dough into slices and place them on top of the cheesecake mix.

Pop it back in the oven for 35-40 minutes until the top looks golden and the middle has set.

Cool your dessert fully, then refrigerate for a while before cutting and enjoying.
