Quick Ramen Carbonara (Print)

A budget-friendly mix of ramen noodles and creamy carbonara sauce.

# Ingredients:

→ Base

01 - 3/4 cup chopped onion
02 - 3 packs instant ramen
03 - 2 cloves crushed garlic
04 - 4 pieces diced bacon

→ Sauce

05 - 1/2 teaspoon salt
06 - 2 whole eggs
07 - Dash of red chili flakes
08 - 1 cup Parmesan, shredded fine

→ Add-ins

09 - Handful of chopped fresh parsley
10 - 3/4 cup frozen green peas

# Steps:

01 - Cook bacon on medium heat till crunchy, 6-7 minutes. Set bacon aside and save fat.
02 - In the bacon fat, cook garlic and onion till soft, about 4 minutes.
03 - Boil ramen without seasoning, stir in peas during the final minute. Save 3/4 cup liquid before draining.
04 - Combine eggs, Parmesan, cooked garlic and onion, bacon drippings, salt, and chili flakes in a bowl.
05 - Stir noodles into the sauce while hot, add crispy bacon and as much reserved water as needed. Top with parsley before serving.

# Notes:

01 - Grate cheese directly from a block for best flavor.
02 - You can swap the bacon with pancetta.
03 - Warm the egg mix slightly to keep it from clumping.
