Fluffy Butter Pecan Loaf covered in rich cream cheese icing. A nutty and sweet option for your tea break or coffee hour.

# Ingredients:

01 - Butter, unsalted: 1 cup, softened for velvety texture.
02 - Sugar, granulated: 2 cups for added sweetness.
03 - Large eggs: 4, added gradually to bind everything.
04 - Vanilla: 1 tsp, to give a nice aroma.
05 - Butter flavoring: 1 tsp (optional) for a buttery boost.
06 - Flour, all-purpose: 2 cups for the cake's foundation.
07 - Powder, baking: 1 tsp to help the cake rise.
08 - Soda, baking: 1/2 tsp, also to aid in rising.
09 - Salt: 1/2 tsp, to balance out the flavors.
10 - Buttermilk: 1 cup (or regular milk plus 1 tbsp of vinegar) for a tender texture.
11 - Pecans: Toasted and chopped, 1 cup, for crunch and nuttiness.
12 - Cream cheese: 8 oz, softened, for an icing base.
13 - Unsalted butter: 1/2 cup, softened, blended into icing.
14 - Sugar, powdered: 4 cups, for making icing sweet.
15 - Vanilla: 1 tsp, added to the icing for extra flavor.
16 - Milk: 1-2 tbsp to thin out the icing if needed.

# Steps:

01 - Set the oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan, then dust it with a bit of flour.
02 - Place pecans in a dry pan over medium heat. Stir them around for about 5-7 minutes until they smell nutty and look golden. Let them cool after toasting.
03 - In a big mixing bowl, whip up the softened butter and sugar until fluffy. Toss in the eggs one by one, mixing after each. Stir in the vanilla and butter flavoring at the end.
04 - In a separate bowl, combine the dry ingredients: flour, baking powder, baking soda, and salt. Slowly add this mixture to the wet ingredients, switching back and forth with the buttermilk. Fold in the chopped pecans last.
05 - Spread the batter evenly into your prepared pan. Bake for 55 to 65 minutes, checking with a toothpick to see if it comes out clean. Let the cake sit in the pan for 10-15 minutes, then move it to a wire rack to cool fully.
06 - For the icing, blend softened cream cheese with butter until smooth. Slowly mix in powdered sugar. Stir in vanilla, and add milk little by little if it's too thick.
07 - Once your cake has fully cooled, spread the cream cheese icing on top. Sprinkle extra pecans as a topping if you'd like.

# Notes:

02 - Best paired with a hot drink like coffee or tea to enjoy anytime.
03 - Always let the cake cool before adding icing, or it might slide off.
