Creamy Comfort Dish (Print Version)

# Ingredients:

01 - 1 cup shredded cheddar cheese
02 - 2 cups chicken or vegetable stock
03 - 1 tablespoon olive oil
04 - 1 small onion, chopped up
05 - 1 cup orzo pasta
06 - 1/2 teaspoon garlic powder
07 - Salt and pepper, as needed
08 - 1/2 cup heavy whipping cream
09 - 2 garlic cloves, chopped finely
10 - 1 cup broccoli (can be fresh or frozen)

→ Optional Garnishes

11 - Extra cheddar cheese (shredded)
12 - A sprinkle of black pepper (freshly cracked)

# Instructions:

01 - Put the chicken or veggie stock into the pot and bring it to bubbling. Lower the heat and toss in the broccoli. Cover it up and let it simmer for around 8-10 minutes. Stir occasionally until the orzo absorbs most of the liquid and softens up.
02 - Mix in the minced garlic and garlic powder. Stir it around for another minute, keeping an eye on it to make sure it doesn’t scorch.
03 - Heat olive oil in a big pot over medium heat. Throw in the diced onion and cook for 3-4 minutes until it’s soft and clear.
04 - Dump the orzo pasta into the pot and stir it around for 1-2 minutes. Make sure it gets all coated in the oil and the onions.
05 - Taste it and sprinkle in salt and pepper as needed. Dish it up warm, and for a little extra, add some shredded cheddar and fresh black pepper on top.
06 - Take the pot off the heat, then stir in the heavy cream and cheese until it’s all smooth and velvety.

# Notes:

01 - If you want more protein, stir in some cooked shrimp or chicken towards the end.
02 - Switch out the broccoli with veggies like kale, peas, or spinach if you'd like.
03 - For a little kick, add red chili flakes, or brighten it up with some lemon juice.
04 - You could use half-and-half instead of cream to lighten it up, but it won’t be as rich.
