Strawberry Breakfast Oat Bars (Print Version)

# Ingredients:

→ Base and Topping

01 - 1 cup rolled oats
02 - 3/4 cup all-purpose flour
03 - 1/2 cup light brown sugar
04 - Pinch of salt
05 - 1/2 teaspoon ground ginger
06 - 8 tablespoons unsalted butter, melted

→ Fruit Filling

07 - 2 cups strawberries, small-diced
08 - 1 teaspoon cornstarch
09 - 2 tablespoons lemon juice
10 - 1 tablespoon granulated sugar, for sprinkling

# Instructions:

01 - Preheat oven to 375°F and line an 8x8 inch baking pan with parchment paper.
02 - Mix oats, flour, brown sugar, ginger and salt in a large bowl. Pour in melted butter and mix until oats are fully moistened.
03 - Set aside 1/2 cup of oat mixture for topping. Press remaining mixture into the prepared pan.
04 - Layer diced strawberries over the base. Sprinkle with cornstarch, lemon juice, and sugar. Crumble reserved oat mixture on top.
05 - Bake for 25-30 minutes until topping is golden. Let cool completely before cutting into bars.
